I went and found most of these around the web. Someday, I’m sure that I’ll get to actually making them in my own kitchen. Probably soon, because these look really good. Way better than frozen stuff.
The First of The Chicken Mince Recipes
This one is from the website Nifty Recipe. It reminds me of a main course at my favorite Vietnamese restaurant. Here are the ingredients you’ll need:
- Chicken fillet 350 g
- Garlic arrows 150 g
- Soy sauce 80 ml
- Water 100 ml
- Corn starch1 tbsp
- Sugar 1 tsp
- Salt 0.5 tsp
- Dry ground ginger 0.25 tsp
- Zira 0.25 tsp
- Dried basil 0.25 tsp
This one out of the chicken mince recipes asks you to actually mince the chicken yourself. You may or may not need to do that depending on the type of chicken you get.
Start by washing the garlic arrows and cutting off the upper parts with buds on them. The shoots should be cut into segments that are about 3 cm long.
In a medium-sized mixing bowl, combine corn starch, salt, sugar and seasonings. Pour the 100 ml of water (about half a cup) and half the soy sauce into the bowl. Whisk that around so everything dissolves.
Assuming you pick up pre-minced chicken, the next thing you need to do is put half the soy sauce into a frying pan at medium-high heat until it boils. Then, reduce to low heat and put in chicken. Stir for 2-3 minutes until this chicken mince recipe is semi-ready.
Once it’s semi-ready, throw in the crushed garlic arrows. Continue to mix and cook for about 5 more minutes. When the time’s up, pour the soy sauce/spice mixture into the frying pan with the chicken and arrows. Increase the heat so the liquid is boiling or near boiling.
The Next One: Stir Fry with Green Onion
This next chicken mince recipe comes from the website funcooking.co.uk and can be made in about 20 minutes. That works for me.
I try to publish recipes that are quick and simple to make. Sometimes, those are the best tasting ones, too. I have made some modifications to this recipe but it’s largely unchanged from where I found it.
- About 1 LB minced chicken
- 1/2 onion
- 4 or 5 garlic cloves
- 1 inch piece julienne cut ginger
- 2 green onions, sliced
- 1 green chili
- 5-6 tbsp plain yogurt
- 3/4 tsp salt
- 1 tsp red chili flakes
- 1 tsp cumin powder
- 1/2 tsp whole cumin
- 1/2 tsp turmeric powder
- garam masala powder 1/2 tsp
- Oil 4 tbsp
Chicken Mince Recipe Directions
Start by heating a pan with 3-4 tbsp oil, 1/2 chopped onion, and 4-5 chopped garlic cloves. Stir for 1 minute.
Add chicken mince and stir on high heat for about 10 minutes. Once all the chicken juice evaporate, move on to the next step.
Add salt, red chili flakes, cumin powder, cumin seeds, turmeric powder, garam masala powder and stir that up for 30 seconds.
Add 5-6 tbsp of yogurt and stir it in there for 15-30 seconds. Then, add the sliced green onion and ginger. Turn off heat and mix it around.
Start loading up your plates. This goes well with sides like regular white rice or brown.
